Citrus Chicken Rice Bowls

These citrus chicken rice bowls were a home run. Anthony and my dad couldn't stop raving about how great they were. Dad said they belonged in a highly rated restaurant! The chicken was bursting with flavor, and all of the components together were melodious. Molly yeh is the best. She is so cute a charismatic on her show and you can just tell she's a good person. And her food is bomb. I followed this recipe, but made a few alterations. First, since my chicken package came with 6 thighs, I altered the proportions a bit, rewritten below. I marinated my chicken for about 1.5 hours before cooking it in a normal pan (we don't have a grill). The soy sauce gave the chicken a wonderful golden brown color. I used one of those steamed brown rice bags, which worked just fine. I also only pickled carrots, instead of both daikon and carrots, and omitted the jalepeño. Will definitely be making this again!

~ 4 tablespoons soy sauce

~ 2 tablespoons sesame oil

~ 1 lime, juiced

~ 1 orange, juiced

~ 1 clove garlic, minced

~ 6 boneless, skinless chicken thighs
