Burnt Sugar Ginger Cookies

I found this recipe in the Washington post holiday cookie spread. I can't speak highly enough about these cookies!! Probably my favorite baked good I've made in a long while. I don't even like ginger that much, but I loved these. The texture was beautiful with the toffee-like burnt ginger pieces dispersed through the cookies. Yum.
I halved the recipe, because I thought that 70 cookies sounded a bit excessive, but I really should've made the whole thing because they were so good, I wish I'd had some to keep! The ones that I made I brought to a holiday party (after eating a few warm ones from the oven of course). The hostess of the party liked the cookies so much that she made them a few days later for a work cookie exchange! I made two alterations to the recipe. 1. I used 1/2 tsp of ground ginger rather than 1/2 tbsp, because I thought the ginger would be too powerful. 2. I used regular brown sugar instead of dark brown sugar, which lightened up the color to a more pleasing tone in my opinion! With these alterations, the cookies were out of this world. Go make them!!
