Mushroom, Spinach, and Goat Cheese Quesadillas

Mushroom is one of those words where the longer you look at it, the weirder it looks.. Mushroom, mushroom, mushroom... Anyways, this recipe was awesome! I made it with my boyfriend for a movie night in and we had so much fun making it :) Also, it was one of the most delicious quesadillas we'd ever had, so that helps. Things always taste better when you make them yourself! In addition to the paprika, we generously added cayenne pepper for a bit of a kick. I decided to omit the sherry vinegar, and it was more than fine without it! Happy cooking.
