Long time no post! At first I was busy with finals, and then I was traveling in California (check my IG @fionasfoodfinds for pics)! What a monumental few weeks. I am now a college graduate.. Whoot whoot! As a result, I will hopefully have more time to try new recipes and post more! I have a number of recipes on the backlog, but I took all of my old pictures off of my phone to make room for new ones in cali, and so the process to retrieve the old photos will be annoying.. I'll do it eventually (as I say with everything.) Anyways, I made this pasta dish, from the Washington Post, the other night! My first time cooking in a while.

At first I wasn't sure how I felt about the dish, but after several bites I enjoyed it more and more. I little bit of parmesan cheese later, and it was delicious. Super easy and fast. The part that took the longest was just waiting for the pasta to finish cooking! The only variation I made from the recipe was using fresh english peas instead of frozen ones. I also served it topped with parmesan. Highly recommend if you want a no-fuss, quick but yummy eat on a weeknight.
