Caprese-Loaded Portobello Mushrooms

Found this delightful recipe on Facebook the other day, and just had to try it. At first, I only made three, because that is the number of mushrooms that came in the package I bought. After I made those three though, I called my boyfriend and asked him to pick up some more on the way home from work. They were that tasty. I made two batches in the same night! I shared them with three other friends, and all of them loved the stuffed mushrooms as well :) The only alterations I made to the recipe was baking the mushrooms on 450 for 10 mins instead of broiling, and using already-made balsamic vinegar. Make sure you really dry out the portobellos and put them in a pan with sides when baking, because the juices run everywhere. Makes for a quick, satisfying, delicious 20-minute meal.
