Elotes (Mexican Street Corn)

Apparently elotes have been all the rage recently. I saw some at the Takoma Park Street festival, and decided to try my hand at them! I got inspiration from several recipes online, and mashed them together to create my own. I think that they turned out really well, but I will warn you that the flavors are very powerful. The mistake I made was packing each cob of corn with too many toppings, which made it a rather overwhelming flavor punch. Next time I make these, I will be more sparing. I'm curious to hear your reactions and any alterations you make!

Fiona's Elotes Recipe

To begin, I boiled 4 ears of corn for approximately 7 minutes (according to package instructions). Meanwhile, I combined 1/4 cup mayonnaise and 1/4 cup sour cream, and melted a couple tablespoons of butter. I also crumbled up some Cotija cheese (found in Target). When the corn was finished boiling, a slathered it in the melted butter and then the sour cream/mayo mixture. On top of that, I spooned on some of the Cotija crumbles. lastly, I added a couple shakes of cayenne pepper and a pinch of garlic powder.
