Cheesy Stuffed Pasta Shells

This recipe was a long time coming. I'd had my eye on it for a while, but it took an eternity to gather all of the ingredients! They had no jumbo pasta shells at Whole Foods or Trader Joe's. Finally, I found some at Target. Even though it was much anticipated, it exceeded my expectations. I mean, can you really go wrong with so much cheese? I think not. I followed this recipe pretty closely. One change I made was swapping the amount of pecorino romano and parmesan. I personally enjoy pecorino more, plus those were just the amounts I had in my fridge. To the seasonings, I also added some southwest seasoning and garlic powder, which I recommend. For the marinara sauce, I used roasted garlic marinara from - can you guess? - Trader Joe's! This was a huge hit with my friends. I was able to share it with four other friends and still have leftovers for lunch the next day! I definitely recommend eating it with a salad because it it very rich and cheesy. Worth all the carbs though, for sure 😋
