Cuban Quinoa Bowls with Lemon-Cashew Dressing

One of my favorite guilt-free dishes to make! I didn't even realize that it was vegan as well as vegetarian until the second time I made it - it's just that tasty. All of the ingredients are good on their own as well as together. My friends raved about the lemon-cashew dressing and wanted to use it on everything! I had to use a nutribullet instead of a blender to make the dressing because... college 😅. But it all worked out ok. I followed this recipe. However, I did not have parsley, cilantro, or agave, and honestly it was perfect without them. An all around healthy, hearty fulfilling meal :) Highly recommend!
