Gordon Ramsay- Inspired Chicken Parm

So I ran across this Gordon Ramsay video on fb and decided to give it a try! The video is nice and short, but leaves out a few key details, so I had to improvise. I used two de-thawed chicken breasts, and sliced them in half (but not all the way) like he did in the video. I did not have access to a rolling pin, so I just pounded them out with my fists (got out some midterm stress, ha). I then dredged the breasts in flour, egg wash (two beaten eggs), and italian breadcrumbs. I simply pressed the breadcrumbs into the chicken with my palms (rather than the wax paper and rolling pin). From there, a coated the bottom of my skillet in olive oil, made sure it was on medium-high heat, and added my coated chicken breast. Just like in the video, I let it sit for 2.5 minutes, flipped once, and cooked the other side for another 2.5 minutes. I then added some tomato sauce (portabella mushroom tomato sauce from TJs) and freshly sliced mozzarella. Popped it into my 350 degree oven until the cheese melted. In the meantime, I cooked some pasta and tossed it with pesto (pesto genovese from TJs). Topped with some salt, pepper, and oregano. It was a really quick and easy dish to make, and turned out fantastic! A friend told me it was the best cooked chicken he'd had in a long time - very tender and juicy.
