Easy Weeknight Veggie Pasta

Hi! Haven't posted in a while, but I have a bunch of recipes on the backlog that I haven't gotten around to posting yet :) I threw this pasta dish together after work one night when I didn't feel like putting effort into my meal, but still wanted to be relatively healthy. I sautéed a clove of garlic (minced) and half an onion (diced) in some olive oil over medium heat. I then added half of a box of Cremini mushrooms (sliced), a ripe tomato (chopped) and lastly dropped in a couple handfuls of fresh spinach. For seasoning, I kept it simple with salt, pepper, and some southwest seasoning (chili powder blend). Added to al dente pasta, grated some parmesan, and violà!
