Creamy Lemon Butter Chicken

This is hands-down one of the best chicken dishes I've had. It is packed full of flavor with a wonderful tender, juicy texture. I followed this recipe pretty closely. When seasoning the chicken, I also added chile powder (when do I not?) for a little heat. The recipe calls for chicken thighs with bone in and skin on. However, I did not look closely enough, and bought de-boned skin-less chicken thighs. It actually turned out really well, but the next time I make this I will probably try it with skin-on thighs. This will add the crunchy element that I think I was lacking. I also only used one large clove of garlic instead of the three called for. I find that recipes always call for a crazy amount of garlic.. Other than that, my only other recommendation would be to add twice the amount of spinach for a better chicken-spinach ratio. I served it simply with a side of rice. Muy delicioso!
