Salmón con Queso

Salmon cakes with mac and cheese is one of my college apartment go-to recipes. I make it when I'm really tired after class, but don't want to eat pure junk. This meal can be whipped up really quickly and can be shared with a friend, SO, or you can have leftovers for yourself ;) For the mac and cheese, I just use the white cheddar shells box from trader joes. The salmon cake recipe I use is loosely based on one my mom taught me! However, since I've made salmon cakes so often now, I decided I wanted to do something to spice them up. Cheese is always the answer. I put a piece of cheese in the middle of each salmon cake. Revolutionary results (although I'm sure someone somewhere has done it, lol). Never going back! I always eat my salmon cakes with ketchup and sometimes with tartar sauce as well. Hope you love this as much as I did! BTW, could not come up with a cute, catchy title for this recipe no matter how hard I tried..
Recipe
Ingredients
~ 8oz can of salmon (look for wild-caught)
~ 1 egg
~ Italian bread crumbs
~ Cheese of your choice (I used goat's milk cheddar cheese from Trader Joes)
~ Chile powder
~ Paprika
~ Onion powder
~ Garlic powder
~ Dried basil
~ Dried parsley
~ Pepper
Directions
1. Drain the salmon and throughly combine it with 1 egg
2. Add 1 tbsp of breadcrumbs and all the spices and mix thoroughly
3. Shape patties around a square slice of cheese (~2 inch diameter patties)
4. Dredge in (coat with) breadcrumbs
5. Cook in a pan over medium high with a little olive oil or butter until golden brown and cooked through
6. Serve immediately for best flavor
