Easy Roasted Potatoes

When I cook without a recipe, I hardly ever actually measure out ingredients. These potatoes are easy peasy, and I just eyeball the spices. You can alter how much you use depending on which ones you like best! I just put a couple shakes of each to make sure the potatoes are coated. These potatoes go great with eggs or alongside fish or chicken! I went to a potluck at my friend Cara's house over labor day weekend, and she made some roasted potatoes with Old Bay, which was really yummy. Next time I make potatoes I'm going to try adding some Old Bay too. I personally like eating potatoes with Ketchup, but whatever floats your boat!
Recipe
Ingredients
~ 5-6 Yukon gold potatoes -- cut into thin rounds
~ Olive oil (enough to lightly coat potatoes)
~ Half an onion -- diced
~ Paprika
~ Chile powder
~ Italian seasoning
~ Garlic powder
~ Salt and pepper
~ Grated parmesan
Directions
1. Preheat oven to 425 degrees
2. Wash potatoes, slice them, and arrange them in a glass pan
3. Dice onions and add to the pan
4. Drizzle a little bit of olive oil over potatoes and onions -- enough to lightly coat
5. Add spices and toss until potatoes are evenly covered
6. Grate some parmesan over the potatoes and cover the pan with foil
7. Put in the preheated oven for 20 minutes
8. After 20 minutes, remove the foil, toss the potatoes once more, and add a little more parmesan
9. Bake for another 15 minutes with the foil off in oder to get a nice crisp on the potatoes
10. Take potatoes out of the oven, add a little more parmesan if you wish, and eat!
