Fall Date Night Dish: Creamy Mushroom Linguine

I must say, humbly (ish), I've done it again! This is one of the first recipes I tried creating myself. I tried it twice to get it just right. The first time I used Cremini mushrooms and milk - which made for a nice light dish. The second time I swapped the Cremini for a combination of Shiitake and Portabella mushrooms. I also used heavy whipping cream instead of milk for a richer, creamier meal the second go-around. The Portabella and shiitake mushrooms also added a more complex, woodsy flavor. Either way, it's a winner! Would pair great with a salad and red wine. The first picture is when I made the dish the first time, and the second picture is my second variation.

Recipe

Serves 2-3

Ingredients

~ 8oz package of linguine (I used the spinach and chive linguine from TJ's) -- cooked

~ 2 tbsp butter + 1 tbsp olive oil

~ 2 cloves garlic -- minced

~ 1 sprig green onion (~3 tbsp) -- finely chopped

~ 1 package (10OZ) cremini or shiitake mushrooms -- thinly sliced

~ salt ++ pepper to taste

~ 1 tbsp flour

~ 1 cup chicken or vegetable broth (I used chicken)

~ 1 tsp rosemary

~ 1 tsp dried basil

~ 1/2 tsp thyme

~ 1/4 tsp tarragon

~ 1 tsp chile powder

~ tbsp fresh parsley ++ extra for garnish

~ 1/2 cup heavy whipping cream (or milk for lighter, healthier option)

~ 1 cup parmesan ++ extra for garnish

Directions

1. Put butter and olive oil into a large pan over medium heat. Add mushrooms, green onion, garlic, salt and pepper. Cook until mushrooms have reduced in size (~ 5 mins).

2. Add flour and mix until mushrooms are fully coated

3. Promptly add the chicken (or vegetable) broth, spices and fresh parsley. Reduce heat to a simmer and cook for about 5 minutes, stirring occasionally, so that the flavors incorporate.

4. Pour milk (or heavy whipping cream) into the mixture. Stir and wait until sauce has thickened a little (~3 mins), then add parmesan cheese. Take off of heat.

5. Add cooked linguine and combine until fully coated.

6. Serve and eat warm :)
