Sweet Soy Sauce Tofu with Sautéed Spinach

This tofu is sweet, savory and very flavorful with a nice crisp on the edges. I've created my own recipe and bake it like once a month! I always serve my tofu with fresh, sautéed spinach. For my spinach, I sauté diced onion with a little olive oil, then throw in a bag of fresh spinach. To the spinach and onions I add chile powder, paprika, garlic powder, salt and pepper! Great vegetarian, yummy healthy meal :)

Tofu Recipe

Ingredients

~ 2 packs of extra firm tofu

~ 3/4 cup soy sauce

~ 3 tbsp olive oil

~ 1 tbsp toasted sesame oil

~ 1 tbsp honey

~ 1/2 tsp paprika

~ 1/2 tsp herb mix (I use "herbs de providence," but I'm sure Italian seasoning would do the trick as well)

~ 1/4 tsp chile powder

~ 1/4 tsp garlic powder

~ 1/4 tsp onion powder

~ salt and pepper to taste

Directions

1. Thoroughly drain tofu and make sure all of the extra water is out

2. Slice tofu into 1/4-1/2 inch pieces and arrange in a glass tray (may need two trays)

3. Mix together all ingredients (excluding tofu) and pour onto the tofu

4. Marinate, flipping occasionally, for at least 30 minutes

5. Cover trays with foil and put into 375 degree oven

6. Bake for 30 mins, flipping tofu once after 15 mins

7. Flip tofu once more, remove foil, and bake for an additional 10 minutes to get the crisp on the tofu

8. Eat!

**Note: if you wish, you can marinate tofu in large gallon ziplock bags and store in fridge.
