Ultimate Grilled Cheese

This is just an all-around great lunch during the summer. I spread butter on one side of two pieces of tuscan bread. Then flip both pieces over and cover each with pesto (I used Pesto al Genovese from TJ's). Cover one pesto-covered piece of bread with fresh basil - the basil adds a nice fresh flavor. Add fresh mozzarella on top of the basil, then fresh tomato slices. Crank some freshly ground black pepper over the tomatoes and then add slices of avocado. Cover with the second piece of bread - butter side up, pesto side down and press gently. Transfer onto pan over medium heat. Flip once golden brown on the bottom, and put on the plate when the second side is also golden.

Eat in a state of bliss!
