A toast to the summer

I am one of those people who cannot start their day on an empty stomach. I know I for one was getting pretty tired of eating the same things for breakfast almost everyday.. some combination of cereal, instant oatmeal and eggs gets old pretty fast. Thank goodness I found this recipe in my newly checked-out library book! The recipe from the book called for toast, goat cheese, nectarines, honey and pecans (pictured far right). I also tried two of my own variations! The first variation simply substituted the nectarines for peaches (far left), and the second substituted pears for nectarines and walnuts for pecans (middle). They are all delicious and refreshing! My personal favorite is the peach variation. Would go well with a mimosa. A nice way to liven up your breakfast routine and get the day started on the right foot :)
