Southwest Chicken Lettuce Boats -- mom as guest

My mom has a lot of dietary restrictions, so it's always great when she finds a recipe that she loves that she can eat without worrying. This is one of those recipes! I thoroughly enjoy it as well. My mom followed the 10- Day Detox Diet Cookbook (picture in slideshow) recipe pretty closely, with a couple of changes. She substituted green onions for red onions, used 2 limes instead of 3, nixed the jalapeños (we aren't spicy people - although I'm working on it), used 3/4 tsp cumin instead of 2, and didn't use hot sauce. I however, added hot sauce and thought it added good flavor. She also added a "bouquet" to the water when boiling the chicken - to the boiling water she added parsley, a small bay leaf and a teaspoon of thyme to increase the chicken's flavor. The stunning presentation was all her - she is an artist so it makes sense. Bon appètit!
