Sweet Potato and White Bean Burgers ++ chipotle mayo recipe

Made this gem about a month ago. I didn't use the nutritional yeast because I didn't have any, and it turned out just fine without it! I also didn't have any chipotle mayo, so I made my own (recipe below)! I always make open-faced sandwiches instead of using two burger buns because 1. I never have burger buns 2. I feel like all of the bread hides some of the flavors inside 3. I expect it's healthier. I also made the black bean burgers from this website at a later date but did not take a picture. They were great as well. For the black bean burgers, I didn't have proper supplies for smashing the mixture together, so I put it in the food processor for a few pulses before adding the breadcrumbs. I served them with the homemade chipotle mayo, New Zealand cheddar cheese from Trader Joes, tomato, avocado and red onion.

Fiona's Homemade Chipotle Mayo

~1/3 cup mayonnaise

~1 squeeze lemon (approximately 1 1/2 teaspoons)

~1/4 tsp garlic powder

~1/2 tsp chile powder

~3/4 tsp southwest seasoning

~ 1/2 tsp smoked paprika

~salt and pepper to taste
